The blackboard of his life should have read “schoolteacher”. But the call of the sun and the desire for something different were stronger than anything, and Guy Vanlancker left rainy Belgium as soon as he had his diploma, to anchor his destiny as a winemaker in the superb vineyard of La Livinière, the first of the Languedoc crus (1999). Nearly 12 hectares are in production, including 8 in the Minervois La Livinière and Minervois AOCs. In 2021, Guy will hand over the reins of the estate to his son Ambroise, who is committed to the organic certification process.

La Comba Negra

The Roussanne is planted on rich, deep, cool soil that acts as an air-conditioner and ensures that the vines have a constant supply of water, even during the hot summer months, while the Vermentino is planted on a plateau at a slightly higher altitude but on poor, south-facing soil, which contributes to the lovely aromatic freshness of this cuvée. Picked by hand in 15 kg crates, the grapes are pressed directly, then the juice is put at low temperature into new 400-litre barrels for a slow vinification lasting around 1 month, followed by 4 months of ageing. The slow fermentation in barrels accentuates the expression of fruit and roundness.
