Château Castigno
You have to like fuchsia, violet and crushed strawberries to enter the monochromatic world of Château Castigno. This 32-hectare estate at the heart of the Saint-Chinian appellation, in Languedoc, is owned by a couple from West Flanders, Marc Verstraete and Tine Claeys, who bought it in 2007. They aimed very high from the outset: the estate was converted to organic methods and the star consultants Michel Tardieu and Philippe Cambie - who usually work in the Côtes-du-Rhône - provide their support during the vinification process. Maintaining their momentum, Marc and Tine have rehabilitated several houses in the village of Assignan to provide a variety of places to live, eat and relax.
Secret des Dieux
Flamboyant red label for this Secret des Dieux (Secret of the Gods) which has a slightly ... devilish side.
Old Carignan vines (over 80 years) and plots of thirty-year-old Grenache and Syrah planted on sandstone and silt. Yield limited to 30 hl/ha. Harvesting by hand. The Carignan and Syrah used for the Secret des Dieux are matured in oak barrels for 12 months, then another 6 months in stainless steel vats, while the Grenache is matured in vats only.
Very intense, dark red robe.
Concentrated aromas of black fruits, aromatic herbs and spices.
Generous in the mouth. Average hint of wood. Fine, long finish.
Pairs perfectly with leg of lamb studded with garlic.
