Entonnage on 05/02/2020, maturing in barrels for 7 months.
Racking in August and bottling on 11/09/2020.
Production - 57 bottles 12°.
Yields limited to 22 hl/ha and manual harvest of perfectly ripe grapes. Classic vinification without fining or addition of sulphites (a few grams added at bottling only). Aged in small oak barrels: in order to have barrels of second wine available, Jean Galler bought 60 litres of organic wine and left it to slumber for some time in his new barrels.
