Domaine Combe Blanche
The story of his life should read "teacher". But the call of the sun and the desire for something different were stronger than the rest, and Guy Vanlancker left rainy Belgium as soon as he had his diploma to establish his destiny in a superb vineyard in La Livinière, the first appellation village in the Languedoc (1999). Twelve hectares are under production, including eight in the AOC Minervois La Livinière and Minervois. Guy has now handed over the keys to La Combe Blanche to his son Ambroise, who immediately began the organic certification process. This was obtained in 2021.
La Chandelière
This cuvée comes from the best soil to be found at La Combe Blanche, on the slopes of La Livinière.
Planted on fairly steep hillsides, the yield from these vines is small (25 to 35 hl/ha). The winemaker vinifies the plots and the grape varieties separately and gives preference to gentle techniques, such as pigeage or treading by foot. The blend spends 24 months in old barrels.
Deep garnet red.
Very attractive nose with red and black fruits.
Voluptuous and silky on the palate; very balanced. Toasted flavour at the finish.
Tender roast beef or lamb cutlets, served with wild mushrooms.
