Schorpion
Wilfried Schorpion is one of the pioneers of winegrowing in Flanders, having planted his two hectares of vines in 1994, behind the house bought by his brother in Vliermaal (Limburg). From the outset, he chose the emblematic grape varieties of Champagne: Chardonnay (two thirds of the planted area), Pinot Noir and Pinot Meunier, to which he added some Auxerrois and a little Riesling. It is in a shed adjoining the vineyard that this craftsman produces, with a finesse rarely equalled, his range of sparkling wines, which wait on slats between two and a half and... nine years for his famous Fibonacci cuvée.
Schorpion Zwart Brut
Two thirds of Chardonnay and one third of Pinot Noir go into the blend of the Zwart Brut cuvée (8 grams of residual sugar per litre). The vine grows on clay-limestone soil, which is left grassy. The harvest is pressed, without de-stemming, in a large vertical press as used in Champagne. This cuvée remains on slats between three and a half and four years before disgorgement (the date of which is mentioned on the back label).
Bright golden yellow colour.
Rather complex nose of citrus fruit, apple and apricot.
Brioche and yeast aromas. Very elegant on the palate with a lingering finish.
Perfect as an aperitif, but also as an accompaniment to seafood.
