Domaine du Chant d'Eole
Belgian Filip Remue had been running the Maison Remue-Gaspard in Champagne for over 25 years when he hit upon the not-so-ridiculous idea of duplicating his success in Quévy, in western Hainaut. A fortunate alliance with one of the main landowners in the area, the Ewbank family from Wespin, gave rise to the Domaine du Chant d'Eole – the Sound of Aeolus estate, a reference to the wind turbines overlooking the vineyard. From the tasting cellar (hyper-modern in concrete and raw timber) to the winery, ambition pervades the entire design. The fermenting cellar can hold the grapes harvested from 30 hectares of vines: an area reached in 2021, and this is just the beginning...
Chant d'Eole Brut Blanc de Blancs
This cuvée, produced using the traditional method, is a ‘Blanc de Blancs’ like in Champagne, except that here they add a touch of Pinot Blanc to the Chardonnay. It was aged on slats for 18 months. Its residual sugar content (7.5 g/l) classes it as a brut wine.
Perfectly shimmering golden robe. Fine, persistent bubbles.
Floral nose with hints of white peach and apple.
Superb freshness in the attack phase, delightful aromatic persistence, minerality that bodes well at the finish.
